My Spanish Rice - TastyPlanner.com

My version of spanish rice, a great accompaniment for many dishes, especially burritos and tacos.
Ingredients
1 cup long grain rice
1 cup low-sodium chicken stock
1 cup my favorite salsa (just use your own fave!)
1 tsp ground cumin
1 tsp olive oil
Instructions
Place all ingredients in a pot with a tight-fitting lid. Bring to a boil and reduce immediately to low. Cook gently on very low, covered tightly, for 15 minutes. Remove lid, stir and scrape bottom. Cover again and let rest in a warm place for 5-10 minutes.
Optional: allow to cool in the fridge overnight and fry the next day in a non-stick pan – oooh, yummy!
