No-Boil Spinach Lasagna - TastyPlanner.com

This is a fantastic recipe I got from my friend’s mother. It is super easy and more than spectacular.

Ingredients
1 lb. ricotta cheese
1.5 C. Shredded mozzarella (up to 12oz.)
1 egg
10 oz. pkg Frozen chopped spinach (thawed & drained)
3/4 tsp. Oregano or Basil
1/8 tsp. black pepper
8 oz. Lasagna pasta (uncooked)
30 oz. spaghetti sauce
1 C. water
1 medium zucchini, sliced
1 medium yellow squash, sliced
Instructions
1) Preheat oven to 350*F.
2) In a large bowl, mix ricotta, 1 C. mozzarella, the egg, spinach, oregano/basil, salt, and pepper.
3) In a glass baking dish (13″×9″×2″), layer 1/2 C. sauce, 1 layer of dry lasagna noodles, half spinach mixture, and a layer of zucchini. Repeat with top layer of squash. Make sure to leave ~1/2" gap around edges.
4) Top with remaining noodles and sauce. Sprinkle with remaining mozzarella. Pour water around edges.
5) Cover lightly with foil and bake for 1 hour 15 min (75 minutes). Let stand 15 minutes before serving.
