Ingredients
1/2 lb. Brussels Sprouts, trimmed and cut in half
1/2 lb. fresh green beans, trimmed
1/2 lb. Asparagus, cut into 2 inch segments
1 T olive oil
1 T lemon juice
1 t lemon zest
1/4 cup pine nuts, toasted
1 T freshly grated parmesan
Salt and pepper to taste
Instructions
Preheat oven to 450 F.
Put sprouts, beans and asparagus into mixing bowl and toss with olive oil and lemon juice.
Arrange in a single layer on roasting pan, and roast 20 minutes, shaking pan occasionally, or until sprouts are slightly crisp and golden brown on the edges.
Place into previous bowl, add toasted pine nuts and shredded Parmesan cheese. Sprinkle with salt and pepper just before serving! Enjoy!
