Ingredients
4 to 6 orange roughy filets
1 Tablespoon olive oil
3/4 cup white wine
1 Tablespoon minced garlic
1 cup water
1 14 oz can diced tomatoes
Instructions
Heat olive oil and garlic in a non-stick skillet over medium-high heat. Add other ingredients and bring to a boil. Reduce heat and simmer. Add fish, cover and simmer until fish is cooked through.
