Orecchiette con Broccoli e Salsicce - TastyPlanner.com

David’s favorite meal.
Ingredients
1 bunch tender broccoli
3 tablespoons extra virgin olive oil
3 garlic cloves, peeled and minced
1/2 pound sweet Italian sausage
1/2 cup water
1 lb. orecciette
1/2 cup grated pecorino romano cheese
Instructions
Trim and peel the broccoli stalks, and cut broccoli into quarters lengthwise. Bring a large pot of water to the boil. Add the salt and broccoli pieces, and cook until broccoli is tender but crisp. Drain and chop medium fine.
Combine the olive oil and garlic in a medium sized saute pan. Cook over low heat for several minutes, or until garlic releases its aroma. Remove the sausage from its casings and crumble it into the pan. Cook sausage over low heat until it loses tis raw color. Add the broccoli and toss. Add about 1/2 cup water and season with salt and pepper to taste. Cook until the broccoli breaks down and forms a coarse puree. Use the back of a wooden spoon to break down the broccoli as it cooks. Add more water if mixture becomes dry.
Cook the orecchiette in abundant boiling salted water until al dente. Drain the pasta and place in a serving bowl. Drizzle with a little olive oil and toss. Add the sauce and 1/2 cup grated Pecorino Romano cheese and toss until the chesse melts into the sauce.
