Orzo Salad with Basil, Tomatoes, Feta and Green Onion - TastyPlanner.com

Time consuming but worth it! A fresh delicious summer salad.

Ingredients
1/4 cup red wine vinegar
2 T fresh squeezed lemon juice
2 tsp honey
1/2 cup olive oil
6 cups chicken broth
1 pound orzo pasta
2 cups red and yellow teardrop or grape tomatoes, halved
1 7 oz. pack fresh crumbled feta cheese (about 1 1/2 cups) ; I used only 6 oz.
1 cup chopped green onion
1 cup chopped fresh basil
1 cup pine nuts, toasted
Instructions
Whisk vinegar, lemon juice, and honey in small bowl. Gradually whisk in oil. Season vinaigrette with salt and pepper. Set aside.
Bring broth to a boil, add orzo, reduce heat to medium and boil until al dente. (Be careful not to overcook it. Mine cooked faster than the box said it would, about 6-7 minutes.) Transfer to large bowl and toss frequently to cool. (I used a large cookie sheet to cool it.)
Mix tomatoes, feta, basil and green onions into orzo. Add vinaigrette; toss to coat. Season with salt and pepper. Add pine nuts and toss.
Serve at room temperature. Serves 8-10
