This was a recipe my friends mom gave me and it turns out great!

Ingredients
olive oil
2 bags of spinach leaves, frozen
1 container extra firm tofu, cut into 1/2" X 1/2" cubes
2 Cans Coconut milk
1 1/2 T curry powder
1/2 t Turmeric
1 1/2 T flour
1 t salt
1/4 1 hot pepper
Instructions
1. Put covering amount of olive oil in large fry pan (with lid), pour 2 bags of spinach on top, cover. Cook on medium high until totally wilted and sizzling (stir frequently). Remove lid to allow steam and moisture to escape. Spatula around for 5 minutes until moisture is almost out of pan and it starts to sizzle.
2. Push spinach aside in pan. Add olive oil and toss in cubes of tofu. Mix around for a couple of minutes until it gets cooked, push to the side.
3. Add more olive oil and drop in dry ingredients. Mix until consistent color, add a little more oil as needed. Keep mixing/ cooking until aroma comes out, about 1-2 minutes.
4. Put Temp on high and mix everything in the pan into the center. Pour in coconut milk bringing it in from the outside. Make sure all ingredients are well mixed.
5. Turn heat to low. Cover with lid. Let sit for 2 minutes. remove cover and stir, make sure the bottom is not burning. Cover again and let sit for another 2 minutes.
6. Turn off heat and let cool. Serve with lightly toasted pita.
Tip: Have everything measured, milk open and ready to pour, dry ingredients in a small cup ready to add.
