Pasta Primavera
Ingredients
1/2 cup water
1 tbls soy sauce
1 cup sliced fresh mushrooms
1 cup broccoli florets
2 green onions, chopped
1 tsp minced fresh garlic
8 oz uncooked linguine or spaghetti
2 cups snow pea pods
6 asparagus spears, cut into 1.5 inch pieces
1 red bell pepper, cut into thin strips.
1/2 cup soy or rice milk
1 tsp slivered frish basil several twists of freshly ground pepper
1/4 cup soy parmesan cheese (optional)
Instructions
Put a large pot of water on to boil before starting to cook the vegetables.
Place the water and soy sauce in a large frying pan. Add the mushrooms, broccoli, green onions, and garlic. Cook, stirring frequently, for 5 minutes.
Drop the pasta into boiling water.
Add the snow peas, asparagus, and bell pepper to the vegetables. Cook for another 5 minutes. Add the milk, basil, and pepper. Cook stirring occasionally for another 5 minutes.
Drain the pasta. Ladle the vegetables over the pasta and top with the soy parmasean cheese if desired.
