Pasta with Ham and Peas - TastyPlanner.com
Chef: Janenb
The easiest pasta ever!
Ingredients
* 1-2 packages of pasta (depends on how many you're feeding and if you want leftovers)
* frozen baby peas (they are WAY better than the regular frozen peas...you may have to search for them but they are worth it)
* packaged cubed ham (or chopped ham lunch meat)
* chopped garlic
* olive oil
* butter
* parsley (fresh, chopped or dried)
* Parmesan cheese
Instructions
Boil the pasta and in the last 5 minutes add approx. 1/2 package of frozen baby peas. When the peas have warmed up, drain pasta and peas in a colander.
Put the pasta pot back on the stove and heat approx 1-2 tbsp of olive oil. Open the cubed ham package, being careful not to spill any liquid. When oil is hot, scoop ham from the package into the oil, reserving the liquid. Stir fry until ham has browned. Add chopped garlic (optional). If using, do not brown garlic.
(If using chopped lunch meat, do not add much oil and do not try to brown – ham will burn easily. Just heat gently. Without broth you may have to use a bit more butter or oil to the pasta)
Gradually add the ham liquid to create broth. Scrape ham bits from the bottom of the pan.
Before liquid evaporates, add back the pasta and peas. Stir to coat. Add 1-2 tbsp butter or olive oil to coat and keep pasta from clumping together. Sprinkle with fresh or dried parsley.
Serve, stirring up the peas and ham from the bottom of the pot.
Top with grated Parmesan cheese and additional parsley if desired.
