Pasta with Spiced Butternut Squash and Yogurt
2 lbs butternut squash, peeled and cut into 1 inch cubes
500 grams shell pasta
2 garlic cloves
1 tsp dried chili pepper flakes
1 tsp coriander
1 tbsp Cumin
3/4 cup plain yogurt
Preheat oven to 400 degrees.
Toss butternut squash in olive oil and roast for 30 minutes.
Meanwhile, cook pasta.
Heat 1 tsp olive oil in a saute pan. Add garlic and saute until golden brown. Add chili pepper flakes, coriander and cumin and saute until fragrant. Reduce heat and add the yogurt. Stir vigirously until all spices are thoroughly mixed in.
Combine pasta, squash and yogurt mixture in a serving dish. Season with black pepper to taste.
