Ingredients
3 Tbsp of veggie oil
2 tbsp mild curry paste
1 can unsweetened coconut milk (14oz)
5 oz of crunchy pb
2 tbsp sugar
salt
3 tbsp rice vinegar (or cider vinegar)
hot chile paste
Instructions
Heat oil in a small saucepan over medium heat, stir in curry paste and saute lightly until the smell is noticeable. Then, pour in coconut milk, mix well and simmer gently for 1-2 minutes
Stir in peanut butter, sugar, salt to taste and vinegar. Simmer for another 5-10 minutes until sauce is slightly smooth. Taste and season with chile paste and salt to taste.
