Pesto Chicken and Potatoes - TastyPlanner.com
Easy to make Pesto chicken and Pesto potatoes. Delicious!
4 Boneless Chicken Breasts
8 tbsp Pesto store bought (Buitoni)
1/2 cup mayonnaise (light preferable)
1 1/2 pounds small new potatoes
1/4 tsp Fresh ground black pepper
1/2 cup pine nuts, toasted
1/3 cup golden raisins
Cut up new potatoes into quarters. Place potatoes and 1 tablespoon of slat in a large pot. Add enough water to cover by 2 inches. Bring to a boil, reduce heat and simmer for about 20 minutes. Drain when cooked and when cool, mix in 6 tbsp pesto.
Heat oven to 400 degrees. Rinse chicken and place in a baking dish lined with foil. Whisk together mayo and 2 tbsp pesto in a small bowl. Spread evenly over top of chicken. Bake until chicken is cooked through- maybe 30-40 minutes. Broil for 2 to 3 minutes or until golden brown on top. Sprinkle chicken with pine nuts and raisins.
