Phalene's Chickpea Curry - TastyPlanner.com
This simple dish takes it’s flavour from the caramelized onion, and is both budget and vegan friendly. I like to serve it on a bed of crisp lettuce with a chopped tomato, and it’s so easy a first time cook can do it.
1 small onion, peeled and chopped
1 can chickpeas, rinsed (540 ml)
Curry to taste
1 tsp olive oil
1/4 cup water
Caramelize onions in a small pot, until brown but crisped. Add chickpeas, oil, water and curry, stirring with a fork to mash, until chickpeas are mostly pulverized, the water has absorbed or evaporated and it is heated through. Serves two students or one very hungry athlete.
