tasty, healthy and cheap
Ingredients
1/2 cup long grain white rice
1/2 lb lean ground beef
1 medium onion chopped
1/2 tsp Cumin
1/8 tsp cinnamon
1 cup diced tomatoes w/ green chili (canned)
1/4 cup water
1 tbsp dark raisins
1 tsp nonpareil capers drained
1/4 tsp salt
Instructions
Cook rice according to package directions omitting the salt and for 3-4 minutes less than directed. Remove from heat and let stand covered for 5 minutes
Spray a medium sized skillet with vegetable spray and set over medium high heat. Add ground beef and onion cook, breaking up meat until browned approximately 8 minutes. Drain off any fat
Stir in the cumin and cinnamon and cook for 30 seconds. Then add the tomatoes, water, raisins, capers and salt. Bring to a boil, reduce the heat to medium, then cook until slightly reduced about 4-5 minutes
Serve picadillo over rice
