Pineapple Walnut Bread - TastyPlanner.com

2 cups all-purpose flour
1/2 cup sugar
2 teaspoons baking powder
1/4 teaspoon baking soda
1/2 cup walnuts ; chopped
2/3 cup whole bran cereal
2/3 cup pineapple juice (from canned fruit)
2/3 cup crushed pineapple ; drained
1 egg ; well beaten
2 tablespoons Melted shortening
Preheat oven to 350 degrees. Sift together the first five ingredients and mix in nuts. Combine cereal, juice and fruit. Let stand 15 minutes. Add egg and shortening to fruit mixture. Combine flour and cereal mixtures; blending well. Bake in loaf pan for 1 to 1 1/2 hours.
