Delicious. For a vegetarian version, try some other filling besides ground beef: perhaps a meat substitute, shredded potatoes, or veggies.
Ingredients
1/2 lb ground beef (or substitute of your choice)
1 small onion, finely chopped
1 hard-boiled egg, finely chopped
1 Tbsp fresh snipped parsley or 1 tsp dried
1/2 tsp salt
Sour Cream Pastry:
3/4 c butter, softened
2 C flour
1 tsp salt
1/2 C sour cream
1 egg yolk
1 Tbsp cold water
Instructions
Cook and stir beef and onion until beef is browned lightly; drain. Stir in egg, parsley, and salt. Set aside.
For pastry, cut butter into flour and salt until particles are size of small peas. Stir in sour cream. Gather pastry into a ball and divide into fourths. Cover with damp towel to prevent drying out.
Roll each fourth into a 12" circle on a floured surface. Cut pastry into 3" circles. (A Tupperware tumbler, canning jar ring, or drinking glass is great for this.)
Place rounded teaspoonful of filling on center of each circle. Fold bottom side of pastry over filling, then the two sides 1/2" in. Moisten last open side with water; fold over to seal.
Place seam side down on ungreased cookie sheet. Repeat with remaining pastry. (Pastries can be covered and refrigerated up to 24 hours at this point.)
To bake, heat oven to 400. Mix egg yolk and water and brush pastries with the mixture. Bake until golden brown, 15-20 minutes.
