Plum Chutney Chicken - TastyPlanner.com

Plum taste is very nice.
2 16 oz. cans plums
2 tsp. grated fresh ginger root
3 cloves garlic, minced
1 medium onion, coarsely chopped
1/4 c. rice wine vinegar
1/3 c. sugar
3/4 c. dried fruit bits (dried apricots, cut into small pieces)
2 tbsp. chili sauce (I never include)
1 1/2 tsp. curry powder
4 drops hot pepper sauce (I never include)
4 boneless, skinless chicken breast halves, but into 2-inch pieces
Pour juice from plums into large skillet or deep pot. Pit the plums and halve them. Add to pot with the rest of the ingredients. Simmer, covered, for 20 minutes. Simmer, uncovered, for 15 to 20 minutes longer, or until chicken is cooked and sauce is thickened.
Serve with rice.
