Pierce each popover with a fork to allow the steam to escape. Steam helps popovers rise during baking, but it will make them soggy if allowed to remain inside.

Ingredients
1 T shortening or nonstick cooking spray
2 beaten eggs
1 c milk
1 t cooking oil
1 C flour
1/4 t salt
Instructions
1. Using 1/2 t shortening for each cup, grease the bottoms and side of 6-ounce custard cups or cups of a popover pan (or muffin tin). Or, lightly spray with cooking spray. Place the custard cups on a 15×10×1″ baking pan; set aside.
2. In a medium bowl use a wire whisk or rotary beater to beat eggs, milk, and oil until combined. Add flour and salt; beat until smooth.
3. Fill the prepared cups half full with the batter. Bake in a 400 degree oven about 40 min or until very firm.
4. Immediately after removing from oven, prick each popover with fork to let steam escape. For crisper popovers, turn off the oven and return popovers to oven for 5-10 mins or until desired crispness is reached. Remove popovers from cups; serve immediately.
Cinnamon Popovers: Prepare as aboce, except add 1/2 t ground cinnamon with the flour. Continue as directed. If desired, serve with honey and butter or margarine.
