Pork Chops with Mushroom Sauce - TastyPlanner.com

4 - 4oz Lean Pork Chop Fillets
1/4 cup shallots, minced
1/2 Clove garlic, minced
8 oz Brown Mushrooms, sliced into large pieces
1 cup Vegetable Stock, preferably homemade
2 tsp ARROWROOT
Salt and pepper to taste
Fresh parsley to garnish (optional)
Season the chops on both sides with salt and pepper. Coat bottom of skillet with olive oil and cook pork over medium heat.
Cook evenly on each side then remove from pan and keep warm.
In same pan add shallots and cook through until translucent, feel free to add some vegetable stock if needed for moisture. Add mushrooms and garlic and sear lightly, adding a little stock as needed.
In a small sauce pan heat vegetable stock to a light boil, whisk in arrowroot until smooth. Reduce heat and cook until sauce reduces and thickens. Add sauce to mushroom skillet to glaze mushrooms. Pour this mixture over chops. Garnish with parsley and enjoy!
