Pork Tenderloin with Tropical Couscous - TastyPlanner.com

A quick healthy gourmet meal that can be made easily on a week night after work
Ingredients
1/2 lb pork tenderloin (plain)
1 large clove of garlic
1 1/2 tsp minced fresh ginger
1/8 tsp of salt
3/4 cup plus 2 tbsp orange juice
1/2 cup of couscous
1 scallion diced
1 1/2 tsp olive oil
Instructions
Cut pork crosswise into 8 slices
Mash garlic, 1/2 tsp ginger, 1/2 tsp of salt in small dish until it forms a paste
Rub paste onto both sides of pork slices and set aside for 5 minutes
Meanwhile cook couscous by bringing 3/4 cup 1 tsp of ginger and 1/8 tsp salt to boil in small sauce pan add couscous and cover remove from heat and let sit for 5 minutes. Fluff with fork then add last 2 tbsp of juice and scallion. Transfer to serving bowl and keep warm.
Heat the oil in a large skillet over medium high heat,. Place pork in skillet. Cook until pork is browned on outside and has lost pink color throughout about 2 minutes per side (do not over cook!) Transfer pork to serving dish and serve with the couscous.

Loved this recipe, added in some kale, sweetcorn, peas and a chopped chili.
Also sprinkled a lil cayenne pepper on pork when cooking to add more flavour.
Also, cooked this the day before pay day so just chopped up one pork chop and added in some diced tofu to make it enough for two, when you cook the tofu with meat it picks up all the flavours, tastes really good!
