Posole is a traditional southwestern stew made with pork roast and hominy. This is m recipe based on several I found.
Ingredients
1 1/2 pound pork roast
1 large onion, chopped fine
1 quart pork or beef broth
28 oz (2 cans) white hominy
1 1/2 tbs oil
1 tsp salt
1/2 tsp chili powder
1/2 tsp Cumin
1/4 tsp black pepper
1/4 tsp ground clove
1 tsp cilantro or Mexican oregano
Instructions
Put the broth, hominy and spices in a slow cooker and set on high.
Trim the pork roast and cut into 1/2 to 1 inch cubes. Coat with 1/2 tsp of salt. Brown in a skillet on high with 1/2 tbs of oil. Add to the slow cooker.
Add the onion and 1/2 tsp of salt to the skillet. Cook until soft, about 3-5 minutes. Add to the slow cooker.
Turn off the skillet. Add the garlic to the skillet with /12 tbs of oil. Cook for 1-2 minutes. Add to the slow cooker.
Cook on high for 1 hour and then on low for 4-8 hours.
Traditionally, this show include red or green chilies, but my family is a picky about spicy food, so I removed them and turned down the spices a bit. For a stew that is eve less traditional and closer to pot roast, substitute 1 cup of diced potatoes and 1/2 cup of carrots for one can of hominy.
