Potato & Garlic Soup - TastyPlanner.com

Velvety smooth and full of fragrant garlic, this simple soup is homely and comforting.

Ingredients
2 tbsp olive oil
1 onion, chopped
6 garlic cloves, chopped
2 large potatoes, chopped
800 ml chicken stock
400 ml milk
1/2 lemon, juiced
4 tbsp cream
2 tbsp chopped fresh parsley
Instructions
Heat the oil in a large saucepan. Add the onion and garlic, and cook gently for about 4 minutes. Stir in the potatoes and stock, and bring to the boil. Reduce the heat, cover, and simmer for about 15 minutes, until the potatoes are tender.
Process the soup in a blender until smooth. Return the soup to the rinsed-out saucepan, add the milk and heat through without boiling. Stir in the lemon juice and salt and pepper to taste.
To serve, ladle the soup into bowls, drizzle a tablespoon of cream into each bowl, add a grinding of black pepper, and sprinkle with parsley.
