Potato Stuffing - TastyPlanner.com

Ingredients
5 lb. bag potatoes
1/2-3/4 c milk
1/4 c butter
1/4 c butter
1 1/2 C onion, diced
5-6 stalks celery diced
2-3 c chicken broth
2 boxes chicken stuffing mix
Instructions
Peel and dice potatoes. Put in large pot and cover with water. Boil until soft. Mash potatoes with milk and first 1/4 c butter. Make potatoes slightly soupy. Melt other 1/4 c butter and slowly brown onion and celery. When onion is very soft and slightly brown, add to potatoes along with stuffing mix and broth. Mix thouroughly, put in greased (5-6 qt.?)casserole and bake at 350 for about 45 min or until desired consistency.
