A new recipe that my friend Deb is wild about. She makes it vegetarian, but I’ll try it with ground beef.

Ingredients
1 bag hashbrowns
1 onion, diced
1 Green Pepper, diced
1 large jar mushrooms, drained
1 pound hamburger, browned
1 jar pizza/spaghetti sauce
1 package shredded cheese
Instructions
Potato Veggie Pizza
Layer hash browns in a casserole dish. (I spray it with Pam, olive oil works well also.)
(Use your favorite seasonings along the way as you add layers.)
Next add veggies – our favorites are zucchini, spinach, onions, and mushrooms. I would also like to try asparagus, egg plant, broccolini – as you can see the possibilities are as great as your imagination.
On top of the veggies I layer sliced fresh tomatoes. I believe that pizza, pesto, or tomato vodka sauce would all work well.
Lastly, I add a mixture of whatever cheese I happen to have in the house. I love to add a little feta or provolone to mozzarella. Use your imagination.
That’s it! I bake it in a 375o oven for about 40 minutes, and it is ready to serve. I always make extra because it is great the next day, and that makes one less day I have to cook. Yeah!!
