These ain’t your mama’s potatoes. Well, I guess, technically they could be. But that’s beside the point, this is a potatoey dish with a pan-full o’ kick. Olè
Fill the bottom of a pan with your bacon grease and put a little heat under it. Wash and peal those taters, dice ‘em up real good and toss ’em in with the grease. Mix in the onion, and things should start sizzlin’. Season to taste with the sauce of your choice and cover (just remember those spuds aren’t flipping themselves, check it every so often to rotate your bounty). From here out it’s touch and go.
