Tuna Potato boats!
Ingredients
4 potatoes, baked
1 c. mayonnaise (USE FF for Core)
1/2 c. grated Cheddar (USE soy or FF for Core)
1/4 c. chopped green sweet pepper
1/4 c. chopped pimento or sweet red bell pepper
1/4 c. chopped onion or scallion
14 oz. (2 cans) drained solid white tuna
1/4 c. mayonnaise (USE FF for Core)
2 tbsp. grated Cheddar (USE soy or FF for Core)
1 stiff egg white (for optional puffiness)
Instructions
Halve baked potatoes lengthwise and scoop out. Toss (don’t mash) with above ingredients and spoon back into skins (they’re heaping). Bake 10 minutes in 400 degree oven.
top with topping.
Bake 10 more minutes at 400 degrees to lightly brown. Serves 4. Freezes well for
reheating later.

Suprisingly good. I made mine with sweet potatoes. The prep and cooking time assumes you have cooked potates on hand, if you don’t add 20-30 mins.
This was good and easy but the downside was that it took foreverrr. I added some paprika to the mixture.
