Pumpkin Apple Pie - TastyPlanner.com

A fantastic way to have both of your holiday favorites in one very simple pie.
Ingredients
Pie filling:
2 1/2 cups Granny Smith (or your tart favorite) apples
1 cup sugar
3 Tablespoons all-purpose flour
1/8 teaspoon salt
1 1/2 cups canned pumpkin
2 eggs
3 teaspoons vanilla
3 teaspoons pumpkin pie spice
1 (9-inch) unbaked pie crust
Crumb Crust:
1/3 cup all-purpose flour
1/3 cup brown sugar
1/4 teaspoon cinnamon
2 tablespoons butter, melted
Instructions
Press crust into 9 inch pie plate.
Peal and thinly slice or chop apples.
Combine sugar, flour and salt in large bowl and mix well. Beat in pumpkin, egg, vanilla and spice untill smooth. Stir in apples gently.
Pour mixture in to pie plate. Mound in the center of the plate to make for a taller pie. Cover edges with foil cuff or pie crust shield and bake at 375* for 45 mins.
Combine flour, sugar and cinnamon in a small bowl. Mix in butter using a fork. Sprinkle over pie. Bake for 15 additional minutes.
Serve warm if desired but is great cold too.
