Ingredients
2 c. all-purpose flour
1/2 tsp salt
1 tsp baking powder
1 tsp ground cinnamon
1 tsp nutmeg
2 cups finely chopped walnuts
4 eggs
1 15oz can pumpkin
1 11/2 c sugar
1 cup vegetable oil
1 tsp vanilla
Instructions
preheat oven to 350 degrees. In large bowl, sift or mix together wll the flour, salt, baking powder, baking soda, cinnamon and nutmeg.
In your mixer bowl beat together the eggs, pumpkin, sugar, oil and vanilla.
Gradually add the flour mixture to the pumpkin mixture and beat well. Add nuts and mix well. Pour batter into 9×13 buttered only on bottom of baking dish.
Bake for 30 minutes or until toothpick inserted in center comes out clean.
Let cool completely on wire tack before cutting.
If you like, you could top with your favorite frosting or use coolwhip. We had it with no topping and it is delicious, I also served ice cream one of the times we had it.
