To turn an all-day stew into a 30-minute meal, we use two pots:
a saucepan to cook the roux and a Dutch oven to cook the
aromatics and chicken.
Chorizo or Kielbasa is an acceptable substitute for Andouille sausage.

Ingredients
1/4 cup vegetable oil
6 tablespoons all-purpose flour
1/2 cups low sodium chicken broth
8 ounces andouille sausage, cut into 1/2-inch rounds
4 boneless skinless chicken breasts (about 1-1/2 pounds) cut into 1-inch chunks
1 onion, chopped fine
1 red bell pepper, seeded and chopped fine
2 celery ribs, chopped fine
2 teaspoons minced fresh thyme
salt
pepper
Instructions
1. Heat 3 tablespoons oil in saucepan over medium heat until
shimmering. Add flour and stir until mixture is dark brown, about
15 minutes. Stir in broth and bring to boil. Cover and keep warm.
2. Meanwhile, heat remaining oil in large Dutch oven over
medium-high heat until just smoking. Cook sausage until
browned, about 3 minutes. Using slotted spoon, transfer to
plate. Cook chicken in sausage fat until browned all over, about
5 minutes. Transfer to plate with sausage. Add onion, bell
pepper, and celery to empty pot and cook until lightly browned,
about 5 minutes.
3. Add hot broth to pot, scraping up any browned bits. Stir in
sausage, chicken, and thyme, and cook until heated through, about
3 minutes. Season with salt and pepper. Serve.
