quick Jambalaya - TastyPlanner.com

an old classic from the Minute Rice cookbook (special thanks to Kraft Foods Canada)
Ingredients
1/2 pound chicken breast cut into pieces
2 tbsp butter or margarine
12 ounces polish sausage or kielbasa
1 small green pepper diced
1 small onion diced
1 stalk celery diced
14 1/2 oz Can of Stewed Tomatoes
1/2 cup of water
1 1/2 cup of instant rice
1/2 tsp salt
1/2 tsp hot pepper sauce
1 tbsp chopped parsley (optional)
10 cooked shrimp (optional)
Instructions
Cook and stir chicken in hot butter in large skillet until browned.
add sausage, green pepper, onion, celery and cook until tender.
mix in tomatoes and water and bring to a boil.
stir in rice, salt, and hot sauce (add shrimp now if desired)
cover and remove from heat
let stand for about 5 minutes
fluff with fork and sprinkle parsley over top
serve with garlic toast (optional)
