Quinoa and Chickpea Salad with Zucchini, Golden Raisins and Pine Nuts - TastyPlanner.com

Ingredients
¼ cup pine nuts
2 medium zucchini, thinly sliced
2 teaspoons olive oil
salt and pepper
2 cups cooked quinoa
2 cups drained, canned chickpeas
4 scallions (white and light-green parts), thinly sliced
¼ cup golden raisins
¼ cup chopped cilantro
4 teaspoons balsamic vinegar
Instructions
1.In a small skillet over medium-low heat, toast pine nuts, shaking the skillet occasionally, until lightly golden, about 5 minutes. Remove from heat.
2.Toss zucchini with 2 teaspoons olive oil and a sprinkling of salt and pepper. Arrange in a single layer on a large rimmed baking sheet. Broil until slightly browned and just tender, about 5 minutes.
3.In a large bowl, combine the quinoa, chickpeas, scallions, raisins and cilantro. Add the pine nuts and zucchini. Drizzle with the remaining ¼ cup olive oil, season with salt and pepper and toss. Add the vinegar and toss again.
