Mexican style pinto beans with the most delicious broth! The recipe is quite big, but it freezes excellently.
Ingredients
1 lb) Bag Pinto Beans
1 can diced tomatoes
1/2 lb. bacon, diced
1 medium onion, diced
1 Bunch Cilantro, chopped
1 or 2 jalapeño peppers, whole
4 tsp. salt
1 tsp. pepper
Instructions
Sort the beans, toss out all the rocks and imperfect beans. Rinse beans and place in a pot. Cover with water 2 inches above beans. Bring to a boil. Reduce heat and simmer, covered for 1 1/2 hours. Add water if needed. Add remaining ingredients. Simmer about 1 1/2 hours. Taste the beans and broth together in a spoon. If it is too bland for you, add a few drops of Tobasco to taste or dice the jalapeño.
