Raspberry Balsamic Parfait - TastyPlanner.com

2 cups fresh raspberries
3 tablespoons aged balsamic vinegar
vegetable oil cooking spray
1/3 cup turbinado sugar
1 cup mascarpone cheese, room temperature
1/4 cup sour cream, at room temperature
3 tablespoons honey
In a bowl, carefully toss the raspberries and vinegar together. Let stand for 15 minutes.
Line a small baking sheet with parchment paper, and spray with vegetable oil. Heat a 10-inch nonstick skillet over medium heat. Add sugar to the pan and cook, stirring occasionally, until it melts, about 5 minutes. Pour sugar onto the prepared baking sheet and let cool 5 to 10 minutes. When cool enough to handle, crumble into small pieces.
In another small bowl, mix the mascarpone cheese, sour cream, and honey until smooth. Spoon the raspberry mixture into 4 8-ounce glasses, and top with the mascarpone mixture. Sprinkle with the crumbled sugar and serve.
