Raspberry Pie - TastyPlanner.com

Delicious summer treat!
Ingredients
1 9" graham cracker crust or regular pie crust
1 T unflavoured gelatin
3 T cold water
1 1/2 c crushed raspberries
1/2 c sugar
1 1/2 T lemon juice
dash salt
1 1/4 c heavy cream, whipped
Instructions
Crush raspberries. Stir in 1/4 c sugar, lemon juice, and salt.
Sprinkle gelatin on cold water in small pan. Let sit 1 minute, then beat to dissolve gelatin. Stir into raspberries. Put in fridge 5-10 minutes to thicken. It will thicken quickly, so keep an eye on it.
Meanwhile whip the cream until softly stiff. Stir whipped cream carefully into raspberry mixture. Pour over crust. Chill until firm.
Garnish with more whipped cream and berries if desired.
