Raw Potato Salad - TastyPlanner.com

Sophisticated and light. You’ll also need the Potato Salad Dressing.

Ingredients
2 cups jicama, diced
1/4 cup Yellow pepper, diced
1/4 cup celery, diced
1 tbsp fresh rosemary, minced
1 tbsp green olives, minced
1/4 avocado, mashed
1/2 red onion, thinly sliced
Fresh parsley sprigs, garnish
Instructions
Combine all ingredients except parsley sprigs and store in refrigerator until needed. Pour Potato Salad Dressing over salad and toss. Serve and garnish with parsley sprigs.
