Real Popcorn Chicken - TastyPlanner.com
3 cups popped popcorn
1 tablespoon fresh Thyme
1/4 teaspoon salt
1/4 teaspoon freshly ground pepper
1 tablespoon water
3 tablespoons all purpose flour
1 pound boneless skinless chicken breast halves, cut into 2-inch pieces
1 tablespoon unsalted butter
1 tablespoon canola oil
1 lemon, cut into wedges
Remove any unpopped popcorn kernels. Put the popcorn in a food processor; cover and pulse until coarsely ground. Place the popcorn in a shallow dish and add the thyme, salt, and pepper.
Place the egg in another shallow dish; add the water and beat lightly with a fork. Place the flour in another shallow dish.
Dredge the chicken in the flour to coat, shaking off excess. Dip the chicken into the egg mixture, then in the popcorn mixture to coat.
Put the butter and oil in a large skillet over medium-high heat. Add chicken and cook 10 to 12 minutes or until chicken is cooked through, turning occasionally to brown evenly. Reduce heat to medium if necessary. Serve with lemon wedges.
