Ingredients
1 ( 2 1/2 to 3 poung ) red cabbage
1 1/2 cups of sugar
2 teaspoons of salt
1 cup of white vinegar
1 cup of raspberry jam, lingonberry jam or cranberry sauce
Instructions
1. Trim off the outer cabbage leaves; cut the cabbage in to quarters and trim out the core.
2. Cut the quarters in to thin slices and place in a large saucepan. Add enough water to reach 1 inch below the level of the cabbage. The cabbage will reduce in bulk as it cooks.
3. Bring the cabbage to a boil and reduce the heat to simmer for 45 minutes.
4. Add the sugar, salt, vinegar and jam and simmer for another 15 minutes or until the cabbage is tender.
5. Adjust vinegar or sugar to taste.
