Ingredients
1 14 1/2-oz can whole tomatoes
1 onion, cut into fourths
2 cloves garlic, pressed
1/2 t. ground red pepper
1/2 t. salt
1 6-oz can tomato paste
12 corn tortillas
1 lb. extra-lean ground beef, browned and drained
3 c. low-fat cheddar cheese, shredded
Instructions
In a blender or food processor, blend tomatoes and their liquid with onion and garlic. Pour into medium size saucepan. Add ground red pepper, salt, and tomato paste and blend again. Place 4 tortillas in bottom of crock-pot. Add one-third of the ground beef, one third of the tomato sauce, and one third of the cheddar cheese. Repeat each layer 2 more times. Cover crockpot and cook on low for 6-8 hours.
