Rice and Vegetable Concoction - TastyPlanner.com

Nice for lunch or a light dinner.
Ingredients
1/2 cups of brown rice
1/3 cups water
dash salt
1 tsp butter/margarine
olive oil
3 cloves of garlic, chopped
1/2 can of diced tomatoes
1 cup frozen corn
1/2 cup sunflower seeds
2 carrots, grated
1 cup cabbage, chopped
Instructions
Cook rice in saucepan with the water, salt, and butter for about 25 minutes or until water is absorbed completely. Put in a skillet with olive oil. Stir in garlic and the other ingredients and stir-fry until hot. Serve.
