This is a creamy Indian dessert that can be served hot or cold and with few ingredients is very simple to make.
Ingredients
1/2 cup basmati rice
5 cups milk
2 tsp cardamom, powdered
2 cinnamon sticks
1/4 cup almonds, crushed
1 pinch saffron, soaked in warm milk
3 tbsp sugar
Instructions
Combine rice, milk, cardamom, and cinnamon sticks in a medium pot, bring to a boil and simmer gently stirring constantly until the rice is soft and the grains are starting to break up (milk will be reduced by about half). Add pre-soaked saffron, almonds, and sugar and reduce further until it reaches desired consistency. Remove cinnamon sticks and serve warm or cold.

There really is no substitute for cardamom. It is a truly unique spice. It is also imperative to this recipe.
But I suppose if a substitute was absolutely necessary you could use ground cinnamon, nutmeg, ginger, or mace or a combination of some or all of them.
Thanks . . .It’s just that I do not have a South Asian market near by. Hopefully I can track down the real spice. I’d like to serve this up for Sunday dinner tomorrow.
Delicious. I found the appropriate spices for this dish, and loved it. I defenitly overcooked it, though. I would have liked it to have a somewhat liquid texture as the picture has it. But that didn’t take away from the taste and praise. Thanks for the recipe.
