Roasted Asparagus Topped with a Poached Egg - TastyPlanner.com

This is a light summery breakfast dish or a simple evening dinner. Take advantage of asparagus in the summer months to enjoy this vegetable at its peak.

Ingredients
1 bunch asparagus
2 tbsp olive oil
2 tsp sea salt
1 tsp freshly ground pepper corns
1 tbsp vinegar (apple cider vinegar recommended)
2 eggs
1 tbsp balsamic vinegar
Instructions
Preheat oven to 425 degrees. Arrange asparagus in a single layer on a cookie sheet. Lightly coat with olive oil. Salt and pepper to taste. Bake until ends begin to brown, about 12-15 minutes, or until asparagus is tender.
While asparagus is roasting, simmer water in a pan, preventing it from boiling. Add vinegar. Crack egg into a small cup.
Using a spoon, stir the water in a circular motion. While the water is still in motion, pour the egg into the center of the water. Let cook 3-5 minutes or until the egg has reached desired firmness.
Spoon the egg out with a slotted spoon, and lightly blot dry on a paper towel if desired. Top asparagus with egg and drizzle with Balsamic Vinegar and salt and pepper.
