This is a delicious dish my sweet Sister Jessi shared with us. It’s become a family favorite. A fun Fall dish to serve to guests as it is so colorful with an Autumn flair! Serve with Saffron Rice, avacado and sour cream to complete the meal. We like Pecan Muffins with whip cream for dessert or my Apple Crisp. Yummmm… gotta LOVE FALL! :)

Ingredients
1 TBSP olive oil
2 cloves minced garlic
3 C. Corn (frozen)
(Saute these 8 min.)
Dice the following
1 C. mango (frozen works best for dicing)
1 C. sweet onion
1 green bell pepper
1 red bell pepper (or yellow/orange)
(add to saute and continue to saute about 5 min)
Add remaining till heated:
1/3 C. lime juice
1/2 tsp salt
1/2 tsp coumin
1 small can mild green chiles
2 cans black beans (I drain and rinse one & dump other in)
Instructions
1. Saute first 3 ingredients 8 minutes
2. Add next 4 ingredients saute about 5-6 min.
3. Add remaining ingredients until heated through
4. Begin Saffron Rice when starting to saute’
5. Can serve on a bed of greens or rice with sour cream and avacado.
