Ingredients
8 Red Potato
2 red bell pepper
1 large onion
1 salt
1 pepper
1 olive oil
1 balsamic vinegar
1 Rosemary
Instructions
Wash and cut the potatoes, and boil in a large pot until they yield to a fork (about 10 minutes).
Wash and slice thick cuts of pepper and onion.
Strain and rinse potatoes with cold water to stop cooking.
Toss potatoes, peppers, and onions together in pan with loads of salt, pepper, and olive oil.
Sprinkle balsamic vinegar and rosemary over vegetables.
Roast at 450 F for about 25-30 minutes.

The recipe calls this an appetizer, but I served it with the Italian Chicken. I think this would be a great main dish for vegetarians too.
Its easy to cut the number of servings in half for this dish.
