“Old Clothes”

Ingredients
One 2-1/2lb flank steak, cut in half (it must be flank steak)
2 bay leaves
1/4 cup olive oil
1 large onion, cut in half and thinly sliced (or diced)
1 large green bell pepper, seeded and cut into thin strips (or diced)
2-3 garlic cloves, finely chopped (I do not use the garlic press for this because I want to preserve the garlic juices, instead I chop)
2 cups drained and chopped canned whole tomatoes or prepared tomato sauce (I prefer the whole tomatoes because I do not like it so tomato-y)
1/2 cooking sherry
Salt and freshly ground black pepper to taste
1/2 cup finely chopped drained pimientos or 1/2 cup drained canned early sweet peas.
Instructions
Place the beef and 1 bay leaf in a large saucepan, cover with salted water, and cook over low heat, covered, until the meat is tender, 1 to 1-1/2 hours. Remove meat from the stock and allow to cool at room temperature. At this point I save the stock to add to the meat as it is cooling so that it stays nice and moist and it also adds flavor. Once the meat has cooled, use a fork or two forks to split apart into “strings of meat” – this is what makes it look like “old clothes”. I also like to season the meat at this point with salt and pepper.
Meanwhile, in a large skillet, heat the oil over medium heat until fragrant, then cook the onions, bell pepper, and garlic, stirring, or until the onions are tender, 6-8 minutes. Add the tomatoes, sherry and the remaining bay leaf, and cook, uncovered, an additional 15 minutes.
Add the shredded meat to the tomato mixture, cover and simmer over low heat for 30 minutes.
Remove bay leaves, serve over rice and garnish if you like.
