Rotini Salad with Baked Beans and Chickpea Biscuits
Ingredients
1 Box Tri-Colored Rotini
1/3 Jar Miracle Whip
1/3 Cup mustard
2 pickles
1 can chickpeas
1 Cup Bisquick
8 oz shredded cheese
1/2 Cup milk
1 egg
2 tb olive oil
1 can baked beans
Instructions
Fill pot with water and add rotini. Let rotini sit in room temperature water for five minutes and then bring to boil. Cook approximately 8-10 minutes until the pasta has ceased but to be crunchy but retains firmness.
Drain Pasta and add several ice cubes to pasta. Mix ice cubes and pasta until the ice cubes have melted or pasta has cooled.
Pour cooked pasta into serving container and stir in miracle whip, mustard, and chopped pickles. Place in refrigerator to chill.
Preheat Oven to 375. Mash Chickpeas with potato masher (not electric mixer) in mixing bowl. Add Bisquick, Shredded cheese, milk, egg, and olive oil. Mix ingredients. Mixture ought to be a soft dough, but, one can add milk or Bisquick as necessary to create proper consistency.
Make 1 inch balls out of biscuit dough and placed on greased cookie sheet. Bake for 10-12 minutes til golden brown.
Serve Rotini Salad, Baked Beans, and Biscuits.
