Runny Egg Sandwich - TastyPlanner.com

This sandwich is one of my favorite things to have for breakfast. Do you like to dip your toast into your egg yolk? If so, you’ll love this sandwich. It’s really easy to make and takes very little time.
This recipe uses sausage, but it can be served with any breakfast meat. Even the Hungarian Inspired Chili Sauce!
Just a little warning – this sandwich is messy and will require a napkin.

Ingredients
8 slices bread, toasted
Grey Poupon to taste
Butter to taste
8 pieces maple sausage (or other breakfast meat)
4 eggs
1 T. Paprika
salt & pepper to taste
3 T. water
1/4 c. shredded Cheddar cheese
Instructions
Spread toast with butter and Grey Poupon. Set aside.
In a frying pan, cook the sausage over medium-high heat until cooked through. Slice sausages in half when cool enough. Set aside.
Blanch the eggs: crack the eggs into a frying pan over medium heat, being careful not to break the yolk. Season with paprika, salt & pepper. Add water and cover pan. Cook for 2 to 3 minutes until cooked on top.
Scoop each egg onto a slice of toast.
Top eggs with sliced sausage and cheddar cheese. Complete with remaining slices of bread. Place sandwiches on serving plates and then slice in half, as the egg yolk will then run out.
