Salad with Apples, Walnuts and Bacon Pieces - TastyPlanner.com

A quick and simple lunch that can have many variations. I created this with what I had in my refrigerator. I usually chop a head of Green Leaf Lettuce and have it already portioned in containers at the begining of the week for my husband and I to grab for easy lunches. We Add toppings the day-of use. Keep this salad healthier by not using croutons. The walnuts act as a “crouton” topper.

Ingredients
2 Cups chopped lettuce of your choice (or Arugula).
1 Small-Medium Apple of your choice (I use fuji or something a little sweeter), chopped into bit-sized bits
1 Tablespoon Bacon Pieces
1/2 Cup Raw Walnuts
1/2 Teaspoon olive oil
Honey Mustard Dressing (or a Balsamic)
Instructions
1.) Toast Walnuts over medium-high heat in pan with the Olive Oil. Toss the walnuts regularly to coat and keep them from burning. Toast for about 5 minuntes or until to your liking. Be careful, sometimes they don’t “look” toasted. Remove pan from heat and let cool for 2-minutes.
2.) To your salad bowl add Lettuce, Apple, Bacon and Toasted Walnuts. Toss.
3.) Add the dressing and enjoy!
*Variation could include using an Avacado instead of an Apple. Use different nuts/seeds (toasted) if you like too. Add shredded carrot…etc.
