Salmon Croquettes - TastyPlanner.com

Fried (pre-cooked) Salmon
with a blend of ingredients that make it exceptionally delicious.

Ingredients
1 16 oz can of Pink Alaskan Salmon
1 16 oz can of Red Alaskan Salmon
1 cup of Louisiana Fish Fry (Corn Meal mix)
pinch of salt
Pinch of Pepper
10 townhouse crackers (crunched up)
3 eggs
1 small diced onion
pair of new gloves
3 cups of canola oil
Instructions
Open cans of salmon. Drain liquid from cans before emptying salmon cans in mixing bowl. Carefully remove all small bones (put them in the cans to be discarded). Add eggs, salt, pepper, crushed crackers, and onions to mixing bowl and (using gloves) mix all the ingredients by squeezing them through your fingers. When smooth, add the Louisiana Fish fry mix and mix till well blended. Roll small balls, make small patties, or make small fingers and fry in canola oil (over medium heat) until golden brown. (If portions are too big, the cooking time will increase and the flavor may be altered). Drain cooked croquettes on a paper towel covered plate. Near the end of the cooking process, the oil may froth and overflow from excess crumbs in bottom, try pouring new oil in pan before adding last batch. ENJOY!
