Savory Peach Chicken - TastyPlanner.com

E. Krieger- teriyaki like.
Ingredients
1/2 c orange juice
2 T brown sugar
2 T soy sauce
2 T rice vinegar
2 T canola oil
1/2 t salt
1/4 t pepper
1 T fresh ginger, grated
2 cloves garlic, minced
1/2 c chicken broth
2 10 oz pkg frozen peaches (or 4 Large fresh peahes, sliced into 1/4")
3 c cooked brown rice
2 T sliced almonds, toasted (opt)
Instructions
Whisk first 4 ingredients (“soy sauce mixture”).
Heat 1 T oil to cook chicken in skillet. season chix w/ s&p. Remove.
Heat 1 T oil in same skillet. cook ginger and garlic (30 sec), add chicken broth, soy sauce mixture, & peaches on high until sauce is thickening and peaches are soft.
Serve chicken over rice topped with sauce, sprinkled w/almonds.
