Seitan Piccata With White Wine and Caper Sauce

Ingredients
6 seitan cutlets
whole wheat flour for dredging
1/4 cup extra virgin olive oil
1/2 cup diced shallots
1/2 cup diced onions
1 tsp chopped garlic
1/4 cup drained capers
1 cup dry white wine
1/4 cup fresh lemon juice
1 cup vegetable broth
2 tbsp unbleached flour
4 tbsp vegan butter
1 cup chopped parsley
1 tsp sea salt
1/2 tsp black pepper
Instructions
Dredge the seitan cutlets in the flour, shaking off excess. In a saute pan, heat 2 tbsp olive oil over high heat and saute the cutlets until crisp and golden brown, about 30 seconds per side. Place each cutlet on an individual plate.
Heat the remaining olive oil in the pan. Add the shallots, onions, garlic and capers, saute and stir until softened, about 1 or 2 minutes. Add the wine and cook until reduced by half. Whisk in the lemon juice and allow to reduce a bit more.
Add the broth and the unbleached flour and bring to a boil. Reduce the heat and simmer for about a minute. Whisk in the margarine, parsley, salt and pepper. Pour over the seitan cutlets and serve at once.
